You will make ganaches and fillings by squeezing and zesting oranges and lemons, brewing teas, chopping herbs and grinding spices just as you need them.
Haas has been the Executive Pastry Chef at the Fours Seasons Hotel in Vancouver, Daniel restaurant in New York City, named on the Top Ten Pastry Chefs in America by Chocolatier and Pastry Art and Design magazines.
