Heir to four generations of bakery and pastry-making tradition, Pierre Hermé began his career at the age of 14 as an apprentice to Gaston Lenôtre. At 20, he became a pastry chef and started his ascension to the summits of the art. His creativity, technical mastery and interest in sharing his expertise have earned him the respect and esteem of the entire profession.
At the end of 1996, he leaves Fauchon to create Pierre Hermé Paris® with his business partner Charles Znaty. Their first shop opened in Tokyo in 1998, followed by a Salon de Thé in July 2000. 2001 marked the return of Pierre Hermé to the Paris scene. Their pastry shop located 72 rue Bonaparte in the fashion area of Saint-Germain-des-Prés was an instant success. Daily, enthusiastic gourmets rediscover his creations and connoisseurs from the world over flock to this temple of sweet delights. Late 2004, a second Parisian boutique with a very innovative interior design opened at 185 rue de Vaugirard. In addition to a pastry training workshop set up jointly with the highly reputed Ecole Ferrandi, part of Paris Chamber of Commerce Group. Early 2005, Tokyo saw the inauguration of the latest concepts of Pierre Hermé Paris: a Luxury Convenience Store and Chocolat Bar. These two outlets are located in the Omotesando district, where all major imported brands and great fashion houses present in Japan have a shop. Finally, a Pierre Hermé Paris shop-in-shop within Department Store Isetan Shinjuku, (probably one of the world’s largest food floors) opened in December 2006.
Famous in France, Japan and the United States, the man that Vogue called "the Picasso of Pastry" revolutionized pastry-making with regard to taste and modernity. At Pierre Hermé Paris, the pastry decors are discreet, the techniques constantly revised. Sweets for adult palates, the creations of Pierre Hermé have been liberated from references to the past, to childhood experiences and make their entry into the world of gastronomy. With "pleasure as his only guide", Pierre Hermé has invented a world of tastes, sensations and pleasures.
