During this class, Chef Sébastien Canonne, M.O.F. (bio) will teach you to use and understand chocolate in many different areas of pastry. He will begin with the fundamentals of working with different chocolates. You’ll move on to learn his best recipes and techniques, as well as his latest creations using selected chocolates in plated desserts, chocolate candies, confectioneries, petits fours, ice creams, sorbets, cakes, and tarts. Emphasis will be placed on balance in your chocolate creations, where the complexity of tastes, textures, and presentation will all be in harmony. This class will also include a full chocolate tasting. Chef Canonne will teach you a line of panning chocolate products, chocolate marshmallow and how to perfect glazing a chocolate cake.
