Chef Sébastien Canonne, M.O.F., Co-Founder and Academic Dean of The French Pastry School, taught host of Windy City LIVE, Ryan Chiaverini, how to make chocolate truffles in advance of the Chicago Chocolate Show. We think Ryan showed potential to be a great chocolatier - just a few more lessons with an MOF should do the trick!

Pastry Chicago is holding its Second Annual Amateur/Student Brownie Competition today, Saturday, November 10th at Schweppe, an iconic kitchen supply store in Lombard, Illinois.  Chef Joshua Johnson, National Pastry Champion, of The French Pastry School will be giving a free educational demonstration of his version of coffee brownies using Julius Meinl coffee and Cocoa Barry Chocolate.  The top five brownie entries will win prizes from KitchenAid.  Stay tuned for pictures from the competition and the winning recipes.

Sean O'Mahony graduated from the inaugural course of L'Art de la Boulangerie in 2011 with the dream to revive the artisanal bread scene in New Orleans. According to journalist Susan Lagenhennig of The Times-Picayune, O'Mahony's new bakery, Breads on Oak, is one of three establishments in the area that are doing just that. Heather Rousseau, L'Art de la Pâtisserie '09, will be competing with her husband, Adam, tonight on a special couples episode of Food Network's Cupcake Wars. The husband and wife team own and operate SugarHigh Bakery in Frankenmuth, MI, which they opened after Heather graduated from The French Pastry School. The episode will air tonight, November 4th, on Food Network at 8:00pm EST.

 The French Pastry School's graduate, Brooke Wilson, completed L'Art de la  Pâtisserie in 2011 and soon after returned to her home state to open Love & Buttercream, a bakery that features her pastry education.

Pastry Chicago is holding its Sixth Annual Amateur/Student Haunted Cupcake Competition today, Saturday, October 27th at Harborside International Golf Center. Chef Mark Seaman, Certified Master Sugar Artist, of The French Pastry School will be giving a free educational demonstration of decoration techniques. The top five cupcake entries will win prizes from KitchenAid and The Spice House. Stay tuned for pictures from the competition and the winning recipes.
